Bombay Vada Pav

Vada pav, alternatively spelt vada pao, is a vegetarian fast food dish native to the state of Maharashtra. The dish consists of a deep fried potato dumpling placed inside a bread bun (pav) sliced almost in half through the middle.

Ingredients
  

  • 20 Garlic Cloves
  • 4-5 Potatoes (Boiled & Meshed)
  • 2 Green Chillies
  • Salt As per Taste
  • Mustard seeds (rai)
  • Turmeric powder (haldi)
  • Red chilli powder
  • Water (accordingly)
  • 4-5 Garlic cloves+ 2 green chillies (grinded)
  • 200 gms Besan
  • Butter/ Oil
  • Pav

Instructions
 

—For Garlic Chutney Paste:

1) 10-15 garlic cloves

2) Salt 

3) 1 tsp Red chilli powder

4) 1-2 tsp water

Churn all the above ingredients in the grinder.

—Besan batter for coating:

1) In a bowl, put besan,½ tsp salt , ½ tsp red chilli powder and some water and make a thick batter.

—For vada:

1) Take a pan, put some oil, mustard seeds, when the seeds starts crackling put garlic-chilly paste, saute them till its golden brown.

2) Put boiled and meshed potatoes, salt, turmeric powder, red chilli powder(½ tsp),

3) Mix all the things togather properly.

4) Let it the above mixture cool down.

5) Now make small balls of above potato mixture, dip it in besan batter and then deep fry it.

—Serving:

1) Apply 1sp of garlic chutney on every pav, put fried vada on it and then saute the vada pav in butter.

2) Serve with tomato ketchup and green chutney.
