Dal Maharani

Dal maharani also known as "Dal-Makhani" is a dish originating from the punjab region of India. The primary ingredients of this dish are black lentils(urad), red kidney beans(rajma), butter and cream. It is mostly available in every menu. It is one of the most popular dal's in India.

Ingredients
  

  • 100 gram kali urad(black lentils) (Soak it overnight and boil in a pressure cooker in the morning with 8-10 whistle)
  • 20 grams Rajma(kidney beans) (soak it overnight with kali udad and boil both of them togather)
  • 2 tsp green chilly (Chopped)
  • 1 Onion (Chopped)
  • 2 Tomatoes (Chopped)
  • 1 tsp lemon juice
  • coriander leaves
  • 2 tsp Fresh cream
  • ½ tsp Garlic (Chopped)
  • ½ tsp Ginger (Chopped)
  • 1 pinch Hing
  • 1 pinch Kasoori meethi
  • 1 pinch Jeera
  • 1 pinch Garam masala
  • Salt (As per taste)
  • 1 tsp dhaniya powder
  • 2 tsp milk (you can put it according to the thickness you want)
  • 20 gram Butter
  • 1 tsp Ghee(Pure)
  • 1 pinch Red chilly powder (As per taste)
  • 1 pinch Turmeric powder(Haldi)
  • 2 tsp Oil
  • 2 tsp Resham patti chilly( paste)

Instructions
 

  • METHOD FOR RESHAM PATTI CHILLY PASTE:
    1)Cut the chilly from center and remove its seeds, soak it in water for 15 minutes.
    2)Now boil the chillies in fresh water for 15 minutes, till its skin gets soft.
    3)Now grind it in a mixer with 2 tbsp of water and make its paste.

METHOD FOR DAL:

  • 1)Heat 1 tbsp oil and ghee then add jeera, hing, onion, ginger ,garlic, chilly and saute for 5 minutes.
    2)Add tomatoes and salt,red chilly powder, haldi , dhaniya powder, saute for sometime till the water of tomato dries up.
    3)Add boiled dal, add resham patti chilli paste.
    4)Add milk,3-4 tbsp of water, corainder leaves, kasoori meethi, garam masala, lemon juice, fresh cream, butter and then cook for 10 mins on slow flame.
    5)Garnish with coriander leaves and fresh cream.
    6)Then serve with hot naan.
